Aloo Bhindi

Ingredients
- Potatoes – 3 (medium cut in wedges)
- Ladyfingers (Bhindi) – 15 nos (1 inch slices)
- Tomatoes – 1 large (small wedges)
- Onion - 1 medium (Sliced)
- Oil – 3 tablespoon
- Cumin (Jeera)– 1 teaspoon
- Ginger garlic paste – 1 teaspoon
- Turmeric (Haldi) - 1/4th teaspoon
- Amchur powder – 1 teaspoon
- Goosebumps Gujarati Garam masala – 1 teaspoon
- Red Chilly powder (Lal mirch) – ½ teaspoon
- Kasoori Methi – ½ teaspoon
- Coriander leaves (dhaniya) - finely chopped
Directions
- Heat oil in a pan, Add the potatoes and fry till cooked and golden brown, remove and keep aside. In the same pan add a little oil and fry the lady fingers until light golden, remove and keep aside.
- In the same pan, heat the remaining oil, add in the cumin, sauté for a minute, add in the onions and sauté till translucent, add in the ginger garlic paste and sauté for a few minutes.
- Add the turmeric, red chili powder, amchur powder, and the Goosebumps Gujarati Garam Masala and sauté until masalas are cooked.
- Add the tomatoes and cook until it becomes tender. Add in the potatoes, lady fingers, kasoori methi and cook until the vegetables are cooked properly.
- Season with salt and garnish with chopped coriander leaves.
