Mumbai Style Pav Bhaji

Ingredients
- Butter – 5-6 tbsp
- Oil – 2 tbsp
- Cumin seeds – 1 tsp
- Onions – 2 medium (Finely chopped)
- Goosebumps Kashmiri Chilli powder – ½ tsp
- Goosebumps Pav Bhaji Masala – 1.5 tbsp
- Coriander leaves - 3 tablespoons (Finely chopped)
- Tomatoes – 1.5 cups (Chopped)
- Carrot – 1/2 cup (Chopped)
- Cauliflower – 5 florets
- Capsicum – ½ cup (Finely chopped)
- Green Peas – 2 tablespoons
- Beetroot – 1/2 cup (Chopped)
- Potatoes – 1 cup (Chopped)
- Goosebumps Kasoori Methi – 1 tsp
- Kashmiri red chilli paste – 2 tsp
- Garlic paste – 2 tsp
- Ginger Garlic paste – 1 tsp
- Salt – To taste
- Lime - 1 no
- Water – 1.5 cups
Directions
- Heat 1 tbsp oil and 2 tbsp butter in a pressure cooker, Add cumin seeds and let it splutter.
- Add ginger garlic paste, one whole finely chopped onion, 1/2 tsp Goosebumps Kashmiri Chilli powder, 1 tbsp Goosebumps Pav Bhaji Masala and sauté on low flame until oil separates.
- Add 5 cauliflower florets, 2 tablespoons green peas, 1/3 cup chopped capsicum, 2 tablespoons French beans, 1/2 cup chopped carrot, 1/2 cup chopped beetroot, 2 tbsp chopped coriander leaves and sauté until raw smell of vegetables go away.
- Add 1 cup chopped potato, 1 cup chopped tomato and cover with 1.5 cups of water, Add 1 tsp salt, cover and pressure cook on medium flame for 5-6 whistles.
- Open Pressure cooker once pressure is released and mash the vegetables until chunky and keep aside.
- In a pan heat 1 tbsp oil, 2 tbsp butter, add half the remaining onion, 1/2 tsp Goosebumps Pav Bhaji Masala, 1 tsp Goosebumps kasuri methi, 2 tsp garlic paste, 2 tp Kashmiri red chilli paste and sauté on low flame for -4 minutes.
- Add the remaining chopped capsicum and chopped tomatoes and mix well, add in the mashed vegetables, mix and cook for 3-4 minutes.
- Mash this mixture until chunky, add a light sprinkling of Goosebumps Pav Bhaji Masala and cook for a couple of minutes, squeeze in juice of half a lime and serve in a bowl.
- In the same pan melt 1 tablespoon butter, add 1/4 tsp Goosebumps Pav Bhaji Masala 1 tsp chopped coriander and fry the pav until olden brown, Make sure to brush both sides of Pav with butter.
- Serve hot garnished with butter, chopped onion, chopped coriander and wedge of lime.
