Achari Marinara Pasta

A simple and easy marinara pasta recipe spiced up with our Goosebumps Olive and Jalapeño pickle. Its a spicy recipe with generous notes of umami.

Ingredients
- Onion - 1 medium (finely chopped)
- Yellow Bell pepper - 1 no. (Diced)
- Tomatoes - 5 medium (Roughly chopped)
- Garlic - 4 cloves (Finely chopped)
- Green chillies - 2 nos (Finely chopped)
- Tomato puree - 200 ml
- Basil leaves - 5/6 nos.
- Sugar - 1 tablespoon.
- Salt and pepper
- Olive Oil - 2 tablespoon
- Parmesan Cheese - 100 gms
- Pasta - 200 gms (Any variety)
- Goosebumps Olive and Jalapeño Pickle - 2 tablespoons
Directions
- Cook the pasta in boiling salted water until done and keep aside, mix in a little oil to avoid it sticking to each other. (Reserve some of the pasta water)
- Heat oil in a pan, add in half the garlic and all the onion and sauté until onions are translucent. add in the tomatoes, tomato puree and the Goosebumps Olive Jalapeño pickle and cook until tomatoes are mushy. Season with salt and sugar.
- Cool this mixture and puree until smooth and keep aside.
- Heat Oil in a pan, add in the garlic, green chili and bell peppers and saute until garlic is aromatic, add the sauce puree and simmer for 5-6 minutes
- Adjust consistency with the pasta water, add in half the basil, mix well, add in the cooked pasta and coat the pasta in the sauce.
- Serve garnished with grated cheese, and torn basil.
